CHAPTER 01

Set the interval by cooking operation

North Carolina's published fire-code table calls for monthly inspection of solid-fuel systems, every three months for high-volume operations such as 24-hour cooking, charbroiling or wok cooking, every six months for other operations and every twelve months for low-volume or seasonal kitchens. The local fire official may approve a different interval.

  • Monthly: solid-fuel cooking
  • Every 3 months: high-volume, 24-hour, wok or charbroiling
  • Every 6 months: other operations
  • Every 12 months: low-volume or seasonal
CHAPTER 02

Separate cleaning from suppression inspection

The exhaust system and automatic fire-suppression system interact, but they are distinct scopes. Track both providers, both service dates and all open deficiencies. Confirm current requirements with Wilmington Fire for the exact occupancy.

CHAPTER 03

Keep the packet usable

A manager should be able to retrieve recent reports, photos, service labels, invoices and repair closeouts without hunting through personal email. Store the same packet digitally and at the site.

The best record answers three questions: what was reached, what was cleaned and what still needs action.
